As mentioned earlier, precise control of timing, water temperature and flow are critical factors during the pour-over process that affects extraction. 1. Uniformly saturated during the first phase of pour, the even wetting of the grounds prevents dry pockets that could lead to under-extraction.

2. Sufficiently agitated so that all of the flavor compounds and oils are released, enhancing the aroma and overall sensory experience of the cup. Many brewers as well as amateurs make the mistake of having too little agitation due to restricted water flow, resulting in under-extraction and a bland tasting cup.

3. Not overly agitated leading to over-extraction, resulting in a bitter and astringent taste.
